Ingredients

  • 2 cups cooked chopped chicken or shredded chicken
  • ¼ cup mayonnaise
  • 1 rib of celery, diced
  • 1 green onion, thinly sliced (substitute ¼ cup red onion, minced)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • salt and pepper, to taste
  • 1 tsp chopped fresh dill (optional)
  • fresh parsley (optional)
  • toasted pecans, chopped (optional)
  • ½ cup grapes, halved (optional)
  • ¼ cup greek yogurt

Directions

  1. 1 Prepare the ingredients as needed, chop, shred, or pulverize chicken, dice onion, dice celery, chop dill if using dill
  2. 2 In a medium bowl, combine the mayonnaise (and greek yogurt if you’re using it), mustard, chicken, celery, onions, lemon juice, and any add-ins and mix well
  3. 3 Salt and pepper to taste
  4. 4 Serve it any way you like, and enjoy!
